Prosa Restaurant & Bar is a Brazilian restaurant in Collingwood, Melbourne, offering traditional and contemporary Brazilian cuisine prepared with a strong focus on quality, consistency and authentic flavours. We are seeking an experienced Cook to join our kitchen team on a full-time basis.
Key responsibilities
- Preparing and cooking a range of dishes in accordance with Prosa's menu, recipes and quality standards
- Preparing ingredients and undertaking mise en place for daily service
- Cooking meats, seafood, vegetables, sauces and accompaniments as well as a range of Brazilian desserts using appropriate cooking techniques
- Preparing traditional Brazilian dishes and other menu items to a consistently high standard
- Monitoring food quality, portion sizes and presentation
- Assisting with menu preparation and daily kitchen operations
- Ensuring food is prepared and stored in accordance with food safety and hygiene requirements
- Monitoring stock levels and assisting with ordering and stock rotation
- Minimising food waste and maintaining appropriate portion control
- Maintaining a clean, organised and safe kitchen and work area
About you
- Relevant commercial cookery qualifications or equivalent relevant experience
- At least 2 years of relevant commercial kitchen experience
- Demonstrated experience preparing and cooking food in a busy restaurant workplace
- Sound knowledge of food preparation, cooking techniques, food safety and kitchen hygiene
- Ability to maintain consistent food quality during busy service periods
- Good organisational and time-management skills
- Ability to work effectively as part of a kitchen team
- Availability to work a flexible roster, including evenings, weekends and public holidays as required
- Experience with Brazilian cuisine is desirable
