Roccella Italian is looking for an experienced and hands-on Restaurant Manager to lead our established, high-volume restaurant in East Melbourne, located directly opposite the Fitzroy Gardens.
This role is suited to a genuine hospitality professional who understands busy restaurant operations, leads confidently from the floor and is committed to delivering an excellent experience for both guests and staff.
Key Responsibilities
- Lead and manage the restaurant’s daily operations
- Supervise, motivate and develop the front-of-house team
- Maintain high standards of service, presentation and guest experience
- Manage staff rostering, labour costs and operational performance
- Coordinate closely with the kitchen and senior management team
- Handle customer feedback professionally and resolve issues effectively
- Support recruitment, onboarding and ongoing staff training
- Maintain compliance with RSA, food safety and workplace requirements
- Monitor venue performance and help achieve agreed operational and financial targets
- Continually improve systems, service standards and overall profitability
About You
- Proven experience as a Restaurant Manager in a busy, high-volume venue
- Strong leadership and people-management skills
- Confident managing large teams and demanding services
- Excellent communication, organisation and problem-solving abilities
- Good commercial understanding of wages, costs and restaurant performance
- Professional, reliable and calm under pressure
- Passionate about hospitality and delivering excellent customer service
- Available to work evenings, weekends and public holidays as required
- Current RSA certificate
- Full Australian working rights
Experience in quality Italian dining, large restaurants or multi-venue hospitality groups will be highly regarded.
