About Biànca

Biànca was born out of a desire to bring the spirit of Italian dining to Brisbane’s Fortitude Valley, capturing the effervescence of a classic trattoria within a sleek, warm, and colourful setting.
The food focuses on perfecting classic Italian dishes, made in-house with fresh, seasonal produce. The beverage program is thoughtful and balanced, featuring Italian-leaning wines and seasonal cocktails that complement the food and the vibrant atmosphere.

The Role

We're looking for a talented Chef de Partie to join the team at Biànca on a full-time basis.

Working alongside a passionate kitchen brigade, you'll take ownership of your section while contributing to one of Brisbane's most vibrant Italian kitchens. This is an excellent opportunity for an experienced chef who takes pride in consistency and quality, loves working with exceptional seasonal produce, and thrives in a collaborative, fast-paced environment.
This role will be well suited to someone who:

- Has a minimum of 2+ years' experience as a Chef de Partie within a high-volume,



quality-driven kitchen

- Is confident working across multiple sections (experience with fresh pasta, grill, or wood-fired ovens is highly regarded)

- Can confidently run a section while maintaining exceptional consistency during busy service

- Takes pride in robust mise en place, organisation, and attention to detail

- Works collaboratively, communicates well, and contributes positively to a high-performing kitchen culture

- Thrives in a fast-paced environment and remains calm under pressure

- Has a genuine passion for Italian cuisine, house-made techniques, and continuous learning

- Has a strong understanding of food safety, kitchen hygiene, and safe work practices

- Brings a positive, sociable attitude and enjoys being part of a supportive brigade
