The Culinary Team works closely with an established network of local producers, with access to exceptional ingredients that inspire and define the seasonal menu. Under the guidance and leadership of our experienced culinary leaders, the team brings these ingredients to life through a distinctive approach that celebrates both Italian tradition and Tasmania’s unique sense of place.

We are seeking an experienced and passionate Head Chef to deliver operational excellence while continuing to elevate Peppina’s culinary reputation. Your focus will be consistency, leadership and execution - maintaining standards while continuing to refine the offering.

You’ll work closely with an established network of Tasmanian producers, delivering a Peppina menu that continues to reflect seasonality, provenance and place.

The Role

This is a hands-on leadership role that blends operational discipline with culinary inspiration.



You will be responsible for:

- Leading and developing a high-performing kitchen team

- Driving consistency, quality, and excellence across every service

- Managing rosters, productivity, and labour costs

- Overseeing ordering, stock control, and food cost management

- Upholding and enhancing Peppina’s culinary standards and guest experience

Above all, you will set the tone in the kitchen—coaching, mentoring, and inspiring your team while maintaining control over quality and delivery.

About You

You are a seasoned Head Chef (or strong Senior Sous ready to step up) who thrives in premium, high-volume environments. You bring:

- Proven leadership experience in high-end restaurants or hotels

- Strong commercial acumen and operational capability

- A collaborative mindset and a passion for developing people

- A deep respect for produce and seasonality

- The ability to deliver calm, controlled, and consistent service
