Position Overview
The Cook will be responsible for preparing and cooking menu items in accordance with established recipes and food safety standards.
The successful candidate will work as part of a team in a commercial kitchen to ensure meals are prepared efficiently, safely and to a consistently high standard.
Key Responsibilities
-Prepare, season and cook authentic Malaysian dishes in accordance with Makan's recipes, portion sizes and presentation standards.
-Prepare Malaysian curries, wok-fried noodles, rice dishes, sambals, sauces, marinades and grilled menu items.
-Complete mise en place, including preparing meats, seafood, vegetables, herbs, spices and curry pastes before service.
-Operate Makan's woks, grills, fryers, ovens and other commercial cooking equipment.
-Regulate cooking temperatures and cooking times to maintain the flavour, texture and consistency of each dish.
-Examine ingredients to confirm their freshness, quality and suitability before preparation.
-Monitor the taste,
quality and presentation of Makan's dishes throughout service.
-Portion and plate meals consistently in accordance with Makan's menu specifications.
-Prepare meals for customers with allergies, intolerances and other dietary requirements.
-Maintain food safety, hygiene and temperature-control standards throughout preparation and service.
-Monitor stock levels for meats, seafood, vegetables, rice, noodles, spices, sauces and other ingredients.
-Rotate stock correctly and minimise food spoilage and wastage.
-Check and store incoming food deliveries in accordance with Makan's food-safety procedures.
-Coordinate with Makan's kitchen team to ensure dine-in and takeaway orders are prepared accurately and efficiently.
-Clean and maintain cooking equipment, utensils and kitchen work areas.
Skills and Experience
-AQF Certificate III including two years' on-the-job training, AQF Certificate IV or higher qualification;
-alternatively, at least three years' relevant experience;
-previous experience preparing authentic Malaysian cuisine;
-robust knowledge of food safety and hygiene;
-excellent organisational and time management skills;
-ability to work efficiently under pressure;
-excellent communication skills.
