About the role

Preston Peak Winery & Function Centre is seeking an experienced and passionate Head Chef to lead the kitchen team and oversee the delivery of high quality food for weddings, functions, corporate events, outside catering and special occasions. The Head Chef will be responsible for menu development, kitchen operations, food quality, staff leadership, food safety, stock management and ensuring every event is delivered to the highest culinary standard.

Key responsibilities
Lead, manage and mentor the kitchen team, including chefs, cooks and kitchen hands
Plan, prepare and deliver high-quality menus for weddings, functions, outside caterings and events
Develop seasonal menus that complement Preston Peak Winery's food and wine offering
Ensure all meals are consistently presented, portioned and prepared to a high standard
Coordinate kitchen operations and food preparation according to event schedules
Manage food ordering, stock levels, storage and minimise food wastage
Monitor food costs and maintain agreed food cost percentages
Ensure compliance with food safety, hygiene and workplace health and safety requirements
Maintain a clean, organised and professional kitchen environment
Coordinate with the General Manager,



Function/Event Managers and service team to ensure smooth event operations

About you
Minimum 3 years' experience as a Chef, with previous Head Chef or Sous Chef experience preferred
Commercial kitchen and high-volume catering experience
Experience working in weddings, functions, hospitality or events is highly desirable
Robust leadership and team-management skills
Excellent knowledge of food preparation, presentation and kitchen operations
Strong understanding of food safety and HACCP principles
Excellent organisation and time-management skills
Ability to remain calm and professional under pressure
Robust communication and teamwork skills
Ability to manage food costs, stock control and kitchen budgets
