About the role

The Venue Sommelier is the senior wine professional at Vito's, responsible for leading the venue's wine service and managing a team of sommeliers. Working closely with the Group Sommelier and General Manager, you will oversee the day-to-day execution of the wine program while playing an active role within the venue leadership team. This is a hands-on floor role, requiring a strong presence throughout service, leading the sommelier team, engaging with guests and supporting the wider FOH team.

Key responsibilities
Work closely with the Group Sommelier to execute the direction, standards and ongoing development of the Vito's wine program.
Lead and develop the Vito's sommelier team, maintaining solid standards across wine service.
Maintain a hands-on presence on the floor, leading wine service and actively supporting the wider restaurant operation.
Provide confident, approachable wine recommendations and build strong guest relationships.
Manage cellar operations, ordering, stock levels, inventory and stocktakes.
Monitor wine sales, beverage costs, margins and wastage.




Deliver ongoing wine education and training to the sommelier and FOH teams.
Work closely with the General Manager and leadership team to maintain robust service and hospitality standards.
Support service direction, guest recovery and day-to-day venue operations.
Lead by example in professionalism, organisation, communication and hospitality.

About you
Minimum 2 years' experience as a Head Sommelier in a quality restaurant environment.
Proven experience leading and developing a team of sommeliers.
Strong wine knowledge, with Italian wine experience highly regarded.
Experience managing cellar operations, inventory, purchasing and beverage costs.
Solid restaurant service and floor leadership experience.
A hands-on leader who is comfortable spending the majority of service on the floor.
Confident working in a busy, high-volume restaurant environment.
Robust leadership, communication and organisational skills.
Commercially minded with a genuine passion for hospitality and wine.
Current NSW RSA.
