We're looking for a Head Sommelier ready to lead that program across the whole precinct.

About The Role
n
As Head Sommelier, you'll curate and deliver the wine program across all four venues at Shell House. From an exclusive, story-driven list for our 2-hatted restaurant, through to approachable, well-considered selections for Menzies, Sky Bar, and Clocktower Bar. You'll lead our Sommelier team, mentor and train front-of-house waitstaff across every venue in wine selection and service, and build the supplier relationships that keep our cellar exceptional.

This is a senior, hands‐on leadership role for someone who wants ownership of a wine program at scale and has the technical depth to satisfy a hatted dining room, and the warmth and energy to make wine feel welcoming everywhere else.

Key Responsibilities

Wine Program Leadership
n
n
Oversee and evolve the wine list across all four venues, with a focus on balance, regionality, sustainability, and storytelling.
n
Build and maintain strong supplier relationships to secure premium and exclusive allocations.
n
Curate and manage dynamic wine lists, including core selections, rotating specials, and high-end offerings.
n
Maintain cellar organisation, purchasing, inventory, and quality control.
n
Develop beverage packages and pairings for events and seasonal menus.
n

Guest Engagement & Service Excellence
n
n
Personally engage with guests to guide wine selections and elevate their experience.
n
Lead wine service with confidence, humility, and hospitality at the core.
n
Educate guests through storytelling, tasting notes, and thoughtful recommendations.
n
n
Team Development & Mentorship
n
n
Recruit, train, and mentor a team of passionate, knowledgeable sommeliers and wine waitstaff.
n
Deliver ongoing on-the-floor wine training and tastings for front-of-house staff across all venues.
n
Foster a positive, inclusive team culture centred on growth and hospitality.
n
n
Collaboration & Events
n
n
Work closely with the culinary team to align wine offerings with seasonal menus.
n
Collaborate with the events team to tailor wine lists for private events and group experiences.
n
Represent Shell House at trade events, media opportunities, and supplier tastings.
n
n
Operational & Financial Oversight
n
n
Maintain and report on beverage KPIs, including sales, COGS, and wastage.
n
Lead pricing strategy in line with budget goals and guest value perception.
n
n

What You'll Bring
n
n
Relevant wine certification: WSET Level 3 or CMS Certified Sommelier as a minimum requirement.
n
Experience: minimum of 5 years in hospitality, including at least 2 years in a similar role within a similar venue.
n
Leadership: proven ability to build, train,
and mentor a team across multiple sites or outlets.
n
Commercial acumen: you are comfortable owning margins, stock control, and pricing strategy, not just curation.
n
Relationship-building: a track record of securing outstanding allocations through genuine supplier relationships.
n
Warmth and storytelling: you have an ability to make wine feel exciting and accessible to every kind of guest, from a first-timer at Sky Bar to a connoisseur in our fine dining room.

Reporting Line
n
This role reports to the General Manager, with support and guidance from the Group F&B; Director on more technical and program-wide matters.
