JRM is currently seeking an accomplished Executive Chef to take the culinary lead at one of Sydney's most established and highly regarded premium dining destinations.
n
This is a significant appointment for a chef with genuine pedigree — someone capable of leading a sophisticated restaurant operation, developing a highly skilled brigade and delivering a food offering that sits confidently amongst Australia's best.

The venue has an exceptional reputation, a loyal local and international following, and a long-standing position within Sydney's premium dining landscape. The incoming Executive Chef will inherit a strong platform, while being given the opportunity to influence the next evolution of the restaurant.

We are looking for a chef with presence, creativity, discipline and commercial intelligence. Someone who understands that running a celebrated kitchen requires far more than creating exceptional food.

The Opportunity
n
As Executive Chef, you will take full ownership of the culinary direction and day-to-day leadership of the kitchen, working closely with senior management to continue building the reputation and performance of the restaurant.
n
You will be responsible for:
n

Leading, mentoring and developing a high-performing kitchen brigade
n
Driving the culinary identity and ongoing evolution of the restaurant
n
Creating intelligent, produce-led menus with a solid sense of seasonality
n
Maintaining exceptional standards of consistency, execution and presentation
n
Building strong relationships with premium growers, producers and suppliers
n
Overseeing food cost, labour, purchasing, stock management and kitchen profitability
n
Implementing clear kitchen systems, structures and operating standards
n
Attracting,



developing and retaining outstanding culinary talent
n
Working collaboratively with senior leadership across service, beverage, events and operations
n
Maintaining the standards expected of a nationally recognised premium restaurant
n

About You
n
This position will suit an established Executive Chef or exceptional Head Chef ready to take responsibility for a significant Sydney restaurant.
n
You will ideally bring:
n
n
Experience leading a highly regarded premium or fine-dining restaurant
n
A background within hatted, Michelin-starred, or internationally recognised kitchens
n
A robust understanding of contemporary Australian dining and exceptional produce
n
Proven experience managing substantial kitchen teams and senior chefs
n
Demonstrated success with menu development and culinary innovation
n
Excellent food, labour and operational cost management
n
A reputation for developing strong kitchen cultures and talented chefs
n
The confidence and maturity to work within a high-profile hospitality environment
n
Strong communication skills and a collaborative leadership style
n
The ambition to make a meaningful contribution to one of Sydney's established dining institutions
n

International experience will be highly regarded, and we are particularly interested in speaking with Australian chefs currently working overseas who may be considering a return to Sydney.
