About the Role:
We are seeking a passionate and experienced Junior Sous Chef to join the culinary team at The Lakes Hotel on a Full Time basis.

Working within Knots Kitchen and across the hotel's functions and events, this is a hands-on leadership role supporting the senior kitchen team across day-to-day restaurant operations, while also assisting with conferences, corporate functions, private events and other functions held across the hotel.

This role is ideal for an experienced Senior Chef de Partie or Junior Sous Chef who is ready to take the next step in their career, enjoys leading by example and thrives in a busy, high-volume kitchen environment.

Key Responsibilities:

- Assist with leading the day-to-day operation of the kitchen alongside the Head Chef and senior kitchen team

- Lead by example during preparation and service, supporting the brigade to maintain smooth and efficient kitchen operations





- Step up and assist with leading kitchen operations when required

- Prepare and execute high-quality dishes across restaurant and function services

- Assist with the delivery of conferences, corporate events, private functions and other hotel events

- Maintain consistently high standards of food quality, presentation and service

- Support the training, development and mentoring of junior kitchen team members

- Assist with stock control, ordering, stock rotation and minimising food wastage

- Maintain a clean, organised and efficient kitchen environment

- Ensure food safety, hygiene and WHS standards are consistently maintained

About You:

- Previous experience as a Senior Chef de Partie, Junior Sous Chef or similar leadership role within a busy commercial kitchen

- Strong leadership skills with the ability to confidently support and guide a kitchen team

- Experience working within a high-volume restaurant, hotel, functions or events environment

- Ability to remain organised and composed during busy services and functions

- Robust understanding of food quality, presentation, food safety and kitchen operations

- Passionate, hands-on and committed to maintaining high standards





- Positive attitude with the ability to work collaboratively as part of a professional kitchen brigade

- Trade-qualified Chef with relevant commercial kitchen experience

- Flexible availability, including nights & weekends

- Full Australian working rights required (sponsorship is not available for this role)
