About the role
WADE is a new restaurant at Wineglass Bay Estate in Coles Bay, Tasmania, overlooking the waters and wetlands of Moulting Lagoon. Created by chef and owner Wade Fordham, WADE tells the story of Tasmania through its produce, people and landscape. The food is seasonal, thoughtful and grounded in available ingredients, showcasing sustainably sourced Tasmanian seafood, wild game, and locally grown vegetables. Open-fire cooking sits at the heart of the kitchen, supported by whole-animal preparation, fermentation, preservation and classical cooking techniques.
We are looking for a Chef de Partie and Commis Chefs to join the opening team and help build WADE from the beginning.
Chef de Partie
We are looking for an experienced and dependable Chef de Partie who can take ownership of a section and deliver consistent results throughout preparation and service. You will work closely with the Head Chef, support junior chefs and help establish the standards and systems of a new kitchen.
Commis Chefs
Our Commis Chef positions would suit qualified, early-career chefs who want to develop their skills in a produce-focused professional kitchen. You do not need to know everything when you arrive. We are looking for people who are curious, reliable, organised and genuinely interested in continuing to learn.
Key responsibilities
Chef de Partie:
- Organise and run an assigned section
- Complete preparation accurately and on time
- Maintain quality, consistency and presentation standards
- Assist with stock control, ordering and waste management
- Follow and help maintain HACCP and food safety procedures
- Complete food safety and temperature-control records accurately
- Communicate clearly during preparation and service
- Support, guide and train junior team members
- Contribute positively to menu development and kitchen culture
Commis Chefs will gain experience in:
- Open-fire cooking
- Tasmanian seafood and wild game
- Whole-animal and whole-fish preparation
- Fermentation and preservation
- Sauce, stock and larder preparation
- Seasonal menu development
- Qualified kitchen organisation and service
About you
- A completed trade qualification in commercial cookery, such as a Certificate III in Commercial Cookery or a recognised equivalent
- Current food safety certification or evidence of accredited food safety training
- A sound working knowledge of HACCP systems and food safety principles
- An understanding of allergen management, temperature control, safe food handling and kitchen hygiene
- Relevant professional kitchen experience appropriate to the position
- The right to work in Australia
- A genuine passion for cooking and quality ingredients
- Strong preparation and organisational skills
- The ability to remain calm and focused during service
- Pride in consistency, presentation and attention to detail
