About the Venue:
Located on the Brighton-Le-Sands waterfront, just 25 minutes from Sydney CBD, The Brighton Hotel – MGallery Collection is one of Sydney's newest premium hospitality destinations.

The precinct is home to Ammos, our premium Greek restaurant, and Le Grand, an exciting new premium fine dining steakhouse opening soon. With approximately 170 seats, a dedicated private dining room, a striking glass-fronted wine cellar, a stellar wine list and a sophisticated dining environment, Le Grand will be a standout addition to the Southern Sydney dining scene.
About the Role:
We are seeking a full-time Sommelier to join the beverage team across Le Grand and Ammos.
With Le Grand preparing to open, this is an exciting opportunity to play a key role in establishing the wine service, cellar standards and guest experience of a new premium fine dining destination, while also supporting the established wine program at Ammos, our premium Greek restaurant.
This is a hands-on role combining exceptional floor service with wine program support, cellar management, ordering, staff training and mentoring. You will work closely with the restaurant management, kitchen and broader hospitality teams to ensure our wine offering is delivered with knowledge, confidence and genuine hospitality.
The role will suit a Sommelier who is passionate about wine, enjoys working in premium dining environments and wants to take an active role in developing their career within the wine industry.
Key Responsibilities:
- Deliver exceptional wine and beverage service across Le Grand and Ammos
- Help establish and maintain the wine program and cellar standards at Le Grand
- Assist with wine selection, purchasing, ordering and stock management
- Maintain accurate cellar and floor stock levels and ensure wines are stored and presented appropriately
- Provide knowledgeable and engaging wine recommendations tailored to individual guest preferences and dining experiences
- Work closely with the kitchen and restaurant teams to develop and deliver thoughtful wine pairings
- Assist with wine list development and ongoing review of the beverage offering
- Train, mentor and develop front-of-house teams in wine knowledge and service standards
- Maintain strong knowledge of wines, regions, producers, vintages and current beverage trends
- Support management with beverage operations and identify opportunities to improve guest experience and commercial performance
- Assist with wine tastings, supplier meetings and other beverage-related initiatives
- Maintain exceptional presentation, service and hospitality standards at all times
About You:
- Previous experience as a Sommelier within a premium restaurant, fine dining venue or luxury hotel environment
- Strong wine knowledge and a genuine passion for the wine industry
- Previous experience with wine service, cellar management, ordering and wine list development
- Confident providing personalised wine recommendations and delivering engaging tableside service
- Passionate about training and mentoring teams to develop their wine knowledge and service skills
- Strong communication, presentation and interpersonal skills
- Highly organised with excellent attention to detail
- Professional, personable and confident when engaging with guests
- A genuine interest in premium food, wine and hospitality
- Court of Master Sommeliers qualification (Introductory or Certified) is highly regarded but not essential
- Full Australian working rights (sponsorship is not available for this role)
- Adaptable availability across a 7-day roster, including evenings, weekends and public holidays as required
