With a strong focus on quality food and exceptional service, The HIGHLINE offers a diverse range of catering options, including Western and Asian banquet menus, with culinary offerings spanning Chinese, Vietnamese, Mediterranean, Italian and contemporary Western cuisine.
About the position We are seeking an experienced Head Chef to lead our kitchen operations and oversee the preparation and delivery of high-quality food across weddings, corporate functions, private celebrations and other large-scale events.
The Head Chef will play a key role in menu development, kitchen planning, food production, quality control and staff leadership, ensuring that every event is delivered to a consistently high culinary standard.
Duties of the head chef is not limited to: Plan and develop menus for weddings, corporate functions, gala dinners, private celebrations and other events, including determining food quantities, portion requirements and production costs.
Prepare and cook a diverse range of dishes, including steaks, meats, seafood, side dishes and other menu items, in accordance with recipes, venue standards and event requirements.
Coordinate high-volume food preparation and production according to event schedules, guest numbers and service requirements.
Monitor the quality, taste, consistency,
portion control and presentation of dishes throughout preparation and service.
Demonstrate cooking techniques and provide guidance to kitchen staff on food preparation, cooking procedures and presentation standards.
Supervise, train and mentor kitchen staff, apprentices and junior chefs, including allocating kitchen duties and supporting staff development.
Manage food ordering and inventory, including monitoring stock levels, receiving deliveries, checking food quality and ensuring appropriate storage and stock rotation.
Monitor food and labour costs and implement effective portion control and waste-reduction practices to support effective kitchen operations.
Coordinate with management, event coordinators and front-of-house staff regarding menu requirements, dietary requests, food preparation issues and service timing.
Ensure dietary requirements and special meal requests are accurately communicated and appropriately prepared.
Operate and oversee the safe and efficient use of commercial kitchen equipment, including grills, chargrills, ovens and other kitchen equipment.
Ensure food is properly handled, stored, preserved and prepared in accordance with food safety and hygiene requirements.
Explain and enforce food safety, hygiene and WHS procedures across the kitchen.
Maintain clean, organised and sanitary kitchen workstations,
equipment and storage areas.
Review kitchen processes and implement improvements to enhance food quality, production efficiency and service delivery.
Ensure kitchen operations comply with company policies, food safety legislation, WHS requirements and relevant industry standards.
Skills and Qualifications Relevant qualifications in Commercial Cookery like Cert IV in commercial cookery and diploma of hospitality management.
At least 1-2 experience as a Head Chef, Sous Chef or senior Chef in a commercial kitchen.
Experience working in high-volume catering, functions, events, hotels or large hospitality venues.
Strong knowledge of food preparation, cooking techniques and menu development.
Experience leading, training and supervising kitchen teams.
Ability to manage multiple food production requirements under tight event deadlines.
Strong organisational and time-management skills.
Sound knowledge of food safety, hygiene and WHS requirements.
Experience with stock control, food ordering and cost management.
Excellent communication skills and the ability to work collaboratively with event and front-of-house teams.
A strong commitment to food quality, presentation and customer satisfaction.
