Independent Butchery | Retail + Wholesale | Carlton, Melbourne

This position supports theevolution of one of Carlton's most iconic butcher shops, which has been a fixture of the local food community for more thanhalf a century. This is a once-in-a-generation opportunity to lead production, define standards, and help shape the future of Melbourne's next chapter in butchery.

We are seeking an experiencedHead Butcherto oversee bothretail service and wholesale productionwithhigh standards of craft, consistency, yield control and leadership.
n
ROLE RESPONSIBILITIES
n
As Head Butcher, you will:
n
n
Lead entire butchery production across retail and wholesale channels
n
Break down whole carcasses and primals with strong yield control
n
Set and maintain cutting, trimming, and portioning standards
n
Train, mentor, and manage junior butchers and production staff
n
Own stock control, ordering, supplier management and product specs
n
Maintain food safety and HACCP compliance
n
Work closely with restaurant and hospitality teams on specifications, forecasting and supply
n
Help develop value-added lines, specialty cuts, and seasonal products
n
n




ABOUT YOU
n
You will ideally have:
n
n
Minimum 8+ years' experienceas a qualified butcher
n
Proven leadership experience in a retail/wholesale butchery
n
Deep understanding of whole animal utilisation and cost management
n
Strong organisational and communication skills
n
Ability to work collaboratively with hospitality operations
n
Experience supplying chefs, venues, or wholesale accounts preferred
n
n
You are confident leading a team, passionate about quality meat, and dedicated to craft and consistency.
n
