About the role

Mercure Townsville is seeking a Food and Beverage Supervisor to join our dynamic hospitality team in Townsville, QLD. This is a full-time position based at our property, where you will play a crucial role in overseeing the day-to-day operations of our food and beverage outlets. The Food and Beverage Supervisor is essential to delivering exceptional guest experiences and maintaining the high standards Mercure is renowned for. You will work closely with our culinary and front-of-house teams to ensure seamless service delivery, operational excellence, and consistent quality across all dining and beverage offerings.

Key responsibilities

- Supervise and coordinate food and beverage service across restaurant, bar and function areas to ensure efficiency and guest satisfaction

- Monitor food preparation, presentation and portion control to maintain quality standards and brand consistency

- Lead, motivate and train food and beverage staff, providing coaching, performance feedback and professional development opportunities

- Manage inventory control, stock rotation and ordering to minimise waste and maintain cost efficiency

- Ensure compliance with health, safety and food hygiene regulations at all times

- Respond promptly to guest concerns and complaints, resolving issues professionally to ensure positive outcomes

- Oversee table management, seating arrangements and guest flow during service periods

- Collaborate with kitchen and management teams to plan menus, special events and promotional activities

- Maintain cleanliness and organisation of all food and beverage areas, including dining spaces and back-of-house facilities

- Monitor and report on key performance metrics,



including service times, labour costs and guest feedback

What we're looking for

- Proven experience as a Food and Beverage Supervisor or similar supervisory role within a hospitality environment, preferably in a hotel or restaurant setting

- Strong leadership and people management skills with the ability to motivate and develop team members effectively

- Excellent knowledge of food and beverage operations, including service standards, menu knowledge and wine/cocktail basics

- Solid understanding of health, safety and food hygiene regulations relevant to the hospitality industry

- Outstanding customer service skills with a genuine passion for creating memorable guest experiences

- Strong organisational and multitasking abilities, with the capacity to manage multiple priorities in a fast-paced environment

- Excellent communication skills, both written and verbal, with the ability to work collaboratively across all levels

- Proficiency in hospitality management systems and point-of-sale (POS) software

- Current RSA (Responsible Service of Alcohol) certification and First Aid certification (or willingness to obtain)

- Flexibility to work evenings, weekends and public holidays as required
