Title: Commis Chef – Patina at Customs House
Location: Brisbane City, Customs House
Type: Full‐time, Fixed‐term
Salary: $72,669 plus 17% super
Responsibilities
Produce high‐quality à la carte and function food for Patina at Customs House, including in‐house events and external catering.
Maintain consistently high standards of food quality, presentation, and service delivery.
Support training and supervision of kitchen hands as required.
Use kitchen equipment safely, responsibly, and in accordance with workplace procedures.
Monitor and record fridge, cold‐room, and incoming stock temperatures as required.
Communicate stock requirements and issues to the chef in charge.
Adhere to all food safety, hygiene, and Food Safety Plan requirements.
Qualifications
Completion of an apprenticeship in cookery.
Minimum two years' experience as a Commis Chef in a similar establishment.
Good knowledge of à la carte and banquet food production.
Understanding of kitchen operations, food safety, and WHS requirements.
Well‐developed organisational, communication, and interpersonal skills.
Positive, professional attitude and commitment to high standards.
