Job Description

J & Co Melbourne is seeking an experienced Sous Chef with strong culinary expertise and demonstrated knowledge of preparing FODMAP-friendly meals to join our team.

Reporting to the Executive Chef – VIC, this is a full time position based in a busy food manufacturing kitchen in Springvale, VIC. The role has a strong focus on high-volume food manufacturing and bulk production, delivering nutritious, high-quality meals to meet the needs of our elderly and health-conscious clients.

Duties include, but are not limited to:

- Oversee all food operations paying particular attention to every stage of the production process
n
- Manage freshness, quality and ensure all products are delivered as per SOP
n
- Ensure all orders are dispatched on time from the kitchen
n
- Ensure consistency across all products
n
- Manage processes, SOPs and on the job training across kitchen team




n
- Quality Assurance
n
- Manage HACCP processes and checks
n
- Manage and maintain food and production labour costs
n
- Receive customer feedback and work with operations to ensure corrective actions are taken
n
- Manage rosters effectively to meet demands
n
- Drive a safe work culture and comply to HACCP and WHS regulations
n
- Proven experience as a Sous Chef or in a similar senior kitchen role.
n
- Strong knowledge and practical experience in preparing FODMAP-friendly meals.
n
- Experience in high-volume food production, commercial kitchens or bulk catering.
n
- Strong understanding of food safety, hygiene and quality standards.
n
- Excellent organisational and time management skills.
n
- Ability to lead, motivate and work collaboratively with a kitchen team.
n
- A positive, hands‐on and solutions-focused approach.
