JRM is currently seeking an accomplishedExecutive Chefto take the culinary lead at one of Sydney's most established and highly regarded premium dining destinations.
This is a significant appointment for a chef with genuine pedigree — someone capable of leading a sophisticated restaurant operation, developing a highly skilled brigade and delivering a food offering that sits confidently amongst Australia's best.
The venue has an exceptional reputation, a loyal local and international following, and a long-standing position within Sydney's premium dining landscape.
The incoming Executive Chef will inherit a strong platform, while being given the opportunity to influence the next evolution of the restaurant.
We are looking for a chef withpresence, creativity, discipline and commercial intelligence.
Someone who understands that running a celebrated kitchen requires far more than creating exceptional food.
The Opportunity
As Executive Chef, you will take full ownership of the culinary direction and day-to-day leadership of the kitchen, working closely with senior management to continue building the reputation and performance of the restaurant.
You will be responsible for:
Leading, mentoring and developing a high-performing kitchen brigade
Driving the culinary identity and ongoing evolution of the restaurant
Creating intelligent, produce-led menus with a strong sense of seasonality
Maintaining exceptional standards of consistency, execution and presentation
Building strong relationships with premium growers, producers and suppliers
Overseeing food cost, labour, purchasing, stock management and kitchen profitability
Implementing clear kitchen systems, structures and operating standards
Attracting,



developing and retaining outstanding culinary talent
Working collaboratively with senior leadership across service, beverage, events and operations
Maintaining the standards expected of a nationally recognised premium restaurant
About You
This position will suit an establishedExecutive Chef or exceptional Head Chefready to take responsibility for a significant Sydney restaurant.
You will ideally bring:
Experience leading a highly regarded premium or fine-dining restaurant
A background withinhatted, Michelin-starred, or internationally recognised kitchens
A strong understanding of contemporary Australian dining and exceptional produce
Proven experience managing substantial kitchen teams and senior chefs
Demonstrated success with menu development and culinary innovation
Excellent food, labour and operational cost management
A reputation for developing robust kitchen cultures and talented chefs
The confidence and maturity to work within a high-profile hospitality environment
Strong communication skills and a collaborative leadership style
The ambition to make a meaningful contribution to one of Sydney's established dining institutions
International experience will be highly regarded, and we are particularly interested in speaking withAustralian chefs currently working overseas who may be considering a return to Sydney.
