Tucked in the heart of Sydney's CBD, The Pillars is a private members' club built for Australia's leaders, innovators and entrepreneurs. We're looking for a Beverage Manager who's ready to own the program end-to-end — someone with the palate to set the standard, the commercial instinct to make it sustainable, and the leadership to bring a team along with them.

You'll set the direction for our beverage offering — from cocktail and wine list design through to supplier relationships, cost control and stock management — owning the P&L; and COGS for the beverage department, while recruiting, training and leading the bar team day to day.

REPORTING & COLLABORATION
n
This role reports to the Venue Manager and sits at the centre of the floor — working closely with our other heads of department, including Membership, Marketing, Events and Kitchen,
to make sure the beverage program supports every part of the member experience.
n Whether it's tailoring drinks for a private function, aligning with a seasonal food menu, or shaping the beverage side of a brand event, you'll be the one at the table representing beverage in those conversations.
n
WHAT WE'RE LOOKING FOR
n
At least 2 years' experience in a similar beverage management
n role
n
A proven ability to design and evolve a cocktail and wine
n program from concept through to execution
n
Strong commercial acumen — full ownership of P&L; and COGS
n for the beverage department, including stock control, supplier relationships and margin management
n
Experience recruiting, training and leading a bar team
n
Deep, confident knowledge across spirits, cocktails and wine
n
A track record of maintaining consistency and standards under
n pressure, in a luxury setting
n
Excellent communication and leadership skills, with the presence
n to represent the venue to members and suppliers alike
n
Confidence and fluency in RSA procedures and broader compliance
n requirements
n
A hands-on, team-first mindset — leading from behind the
n bar, not just from the office
n
A NICE-TO-HAVE
n
Formal wine education — WSET Level 2 or above, sommelier training,
or equivalent — is a genuine advantage for this role. You'll have real scope to shape our wine list alongside the cocktail program, and a qualification like this means you can hit the ground running.
