About the role The Panning & Confectionery Production Worker supports the preparation of premium, artisan macadamia-based confectionery products, including chocolate-coated nuts, glazed items, and hand-crafted specialty lines. This role involves operating panning equipment, tempering chocolate, finishing artisan products, and supporting retail and e-commerce fulfilment. Attention to craftsmanship, quality, and food safety is essential.
Key responsibilities
Artisan Panning & Confectionery Production:
- Operate panning machines for applying chocolate, yogurt, or glaze coatings to macadamia kernels.
- Prepare artisan batches including small-batch, hand-crafted, or limited-edition products.
- Manually coat, dust, polish, and decorate nuts for specialty items (e.g., cocoa-dusted, hand-drizzled, candied varieties).
- Monitor product appearance, texture, and taste to ensure a consistent, high-end finish.
Chocolate Tempering & Application:
- Operate tempering equipment or perform manual tempering techniques to prepare couverture chocolate.
- Ensure chocolate is tempered correctly for shine, snap, and shelf stability.
- Apply tempered chocolate to nuts via panning, enrobing, or hand-coating methods.
Quality Assurance & Traceability:
- Conduct in-process checks for coating quality, thickness, uniformity, and aesthetic appeal.
- Maintain accurate batch and ingredient traceability records according to HACCP and GMP standards.
- Follow strict allergen and cross-contact protocols, especially when changing coatings or flavours.
Retail & E-Commerce Fulfillment:
- Assist in packaging finished artisan products for retail shelves, gift sets, or online orders.
- Weigh, label, seal,
and code packaging to meet branding and compliance standards.
- Prepare custom and seasonal product lines for promotional campaigns or direct-to-customer dispatch.
- Coordinate with the fulfilment team to ensure accurate order picking, boxing, and presentation.
Cleaning, Hygiene & Equipment Maintenance:
- Thoroughly clean panning machines, tempering tools, moulds, and preparation areas between batches.
- Follow food-grade cleaning practices, especially for allergen-sensitive or flavoured products.
- Report any maintenance needs or equipment malfunctions to supervisors promptly.
Qualifications & Experience
- Experience in food manufacturing or artisan confectionery preferred.
- Skills in chocolate tempering, hand-coating, or boutique food presentation are highly regarded.
- Familiarity with panning or enrobing equipment (training provided).
- Working knowledge of HACCP, GMP, allergen management, and food safety protocols.

- May require adaptable shifts, weekend work, or extended hours during seasonal or promotional periods.
