Description

Novotel Sydney Parramatta is looking for an experienced and passionate Director of Culinary to join our leadership team on a full-time basis. Located just minutes from Parramatta CBD, our hotel caters to a diverse mix of business and leisure travellers. As the Director of Culinary, you will oversee the hotel’s culinary and Food & Beverage operations, leading both our kitchen and front-of-house teams to deliver exceptional food, service and guest experiences while driving team engagement, operational excellence and commercial performance.

Reporting to the General Manager, this role is responsible for:

- Providing strategic and operational leadership across the hotel’s kitchen and Food & Beverage operations.
- Leading, coaching and developing culinary and Food & Beverage teams to achieve high standards of performance and service.
- Overseeing the day-to-day operations of the kitchen, restaurant, bar, room service and conferencing.
- Driving exceptional food quality, presentation and guest experiences while maintaining brand standards.
- Developing menus and culinary offerings that reflect guest expectations, market trends and commercial objectives.
- Managing food and beverage costs, labour costs, rosters, stock control and departmental expenses.
- Working closely with the leadership team to maximise revenue, profitability and overall departmental performance.
- Managing food purchasing, supplier relationships, inventory control and monthly stocktakes.




- Ensuring consistent food quality, kitchen efficiency and compliance with food safety standards.
- Collaborating with the Food & Beverage team to ensure a seamless connection between kitchen operations and guest service.
- Driving innovation and continuous improvement across culinary and Food & Beverage operations.
- Ensuring compliance with food safety, RSA, WHS and hotel policies and procedures.

What We’re Looking For:

- Proven leadership experience in a senior culinary, Food & Beverage or hotel hospitality role.
- Previous experience overseeing both kitchen and Food & Beverage operations will be highly regarded.
- A genuine passion for food, hospitality and delivering exceptional guest experiences.
- Strong leadership skills with the ability to inspire, coach and develop diverse teams.
- Demonstrated experience managing budgets, labour, food costs, stock control and departmental performance.
- Strong commercial acumen and the ability to identify opportunities to improve revenue and profitability.
- Excellent communication, organisational and problem-solving skills.
- A robust understanding of food safety, kitchen operations and hospitality compliance requirements.
- A current Food Safety Supervisor certificate and RSA certificate, or the ability to obtain them.
- The flexibility to work a rotating roster, including evenings, weekends and public holidays.
