Trippas White Group is seeking an exceptional HeadChef to lead the culinary team at Botanic House Sydney, working closely withrenowned chef and restaurateur Luke Nguyen.

This is an exciting opportunity for a highly accomplishedchef with a passion for Vietnamese and South East Asian cuisine to take the lead in one of Sydney’s most iconic hospitality destinations.

The Opportunity

As Head Chef, you will be responsible for leading thekitchen operation across a dynamic, multi-outlet venue, deliveringoutstanding food and an exceptional guest experience seven days a week.

Working alongside Luke Nguyen, you will play a key rolein developing and maintaining a distinctive culinary offering thatcelebrates the flavours, produce and traditions of Vietnam and South East Asia, while bringinga contemporary Sydney perspective to the menu.

The role also encompasses culinary oversight of FarmCove Eatery, ensuring consistency, quality and strong operational standardsacross the broader venue operation. You will also work closely with the events team todeliver exceptional food experiences across events and functions held at thevenue, ranging from intimate gatherings through to large-scale events.

Key Responsibilities

- Lead the culinary operation across Botanic House andFarm Cove Eatery
- Work closely with Luke Nguyen on menu development,culinary direction and execution
- Oversee food production and service across multipleoutlets
- Lead the kitchen through a 7-day operation
- Manage and execute menus for events, functions andspecial occasions at the venue
- Maintain consistently high standards across foodquality, presentation, service and kitchen operations
- Recruit, lead, mentor and develop a high-performingculinary team
- Manage food costs, labour,



stock control and kitchenbudgets
- Ensure robust compliance with food safety, hygiene andworkplace standards
- Drive innovation while maintaining consistency andcommercial sustainability
- Manage budgets, food and labour costs, and procurementto protect profitability without compromising on quality.

About You

We are looking for a proven senior chef who brings:

- Strong expertise in Vietnamese and South East Asiancuisine
- Previous experience as a Head Chef or senior kitchenleader in a high-volumehospitality environment
- Experience managing multiple outlets or complex kitchenoperations
- Experience delivering food for events and functions
- The ability to lead, inspire and develop a largeculinary team
- Strong commercial and operational understanding,including food costs, labour and kitchen controls
- Experience working within 7-day operations
- A passion for quality, consistency, presentation andexceptional guest experiences
- Excellent communication, organisation and leadershipskills
- A genuine interest in contemporary Asian cuisine and acommitment to innovation
