Hotel Stuart is a dining and entertainment Hotel situated close to the Townsville Racecourse. The hotel completed a major renovation and refurbishment in 2022 and boasts up-to-date and comfortable facilities including the family friendly Stables Bistro, a designated children's play area, sports bar, private gaming room and drive through bottle shop.

We are looking for a Head Chef that will lead guide and grow our current team and elevate our current food offering. This is a key leadership role within our business and one that will require working with the Hotel Manager closely to achieve the best outcomes for our valued customers and business.

Our ideal candidate will possess the following skills qualities and capabilities.
n

Be a hands-on leader
n
Remain poised and resilient to ensure a smooth coordinated service, while maintaining Quality and efficiency
n
Trade Industry Qualification in Commercial Cookery
n
Have a minimum 5 years industry experience
n
Manage all aspects of the kitchen operations including but not limited to stock ordering, stock control, minimising stock losses
n
Conduct and co-ordinate monthly food stocktakes in conjunction with the Hotel Manager
n
Rostering of staff
n
Development of a variety of menus, including lunch, dinner, all day dining, snack menus as well as daily specials
n
Manage maintain and control all aspects of the hotel's food safety control plan
n
Have full knowledge and understanding of standard 3.2.2A
n
Ensure that hotel Lillywhite Hotel Group culinary standards are adhered to and maintained.
n
Shifts will include day, evening and some straight through shifts
n
