We're currently looking for an experienced Sous Chef to support the day-to-day operation of the kitchen and help lead a strong, service-focused brigade. This role is ideal for a chef who thrives in fast-paced hospitality environments, enjoys mentoring junior staff and takes pride in delivering consistent, quality food during high-volume service.

The Tote is a true local institution, known for its pub classics, steaks, pizzas, live sport and weekly events, creating a dynamic kitchen environment with a varied and consistent trade base.

About the role:
n
Support the Head Chef in leading day-to-day kitchen operations
n
Lead service and maintain quality standards during busy trade periods
n
Assist with ordering, stock control and minimising wastage
n
Support roster management and kitchen organisation
n
Train,



mentor and develop junior chefs and kitchen staff
n
Maintain food safety, cleanliness and compliance standards
n
Contribute to menu execution and operational improvements
n
What we're looking for:
n
Previous experience as a Sous Chef or strong Senior CDP ready to step up
n
Experience working in high-volume kitchens
n
Strong communication and leadership skills
n
Ability to stay calm and organised under pressure
n
Sound understanding of food safety and kitchen operations
n
Positive attitude with a hands-on approach to leadership
n
Flexible availability across nights, weekends and public holidays
n
