About the Role:
We are seeking an experienced and passionate
Assistant Venue Manager
to join the team at
Ammos
.
Working closely with the Venue Manager and wider leadership team, you will play an significant role in the day-to-day operation of the restaurant, supporting service excellence, team performance and an exceptional guest experience.
This is a hands‐on leadership position suited to an experienced hospitality professional who enjoys being on the floor, leading by example and creating a premium dining experience for every guest.
You will support the Venue Manager across daily operations, team leadership, service standards, guest relations and operational administration, while helping to foster a positive and high‐performing team culture.
An Exciting Opportunity Within the Brighton Precinct:
As the
Brighton Hotel – MGallery Collection
precinct continues to grow, a new
premium fine dining steakhouse
is also preparing to open within the precinct, along with two more restaurants in the upcoming weeks.
We would welcome applications from candidates who may be interested in opportunities across
both Ammos and the upcoming steakhouse
, particularly those with experience in premium restaurants,
fine dining or high‐end hospitality environments.
Key Responsibilities:
Support the Venue Manager in overseeing the day‐to‐day operation of the restaurant
Lead and motivate the front‐of‐house team to deliver exceptional service standards
Be highly visible on the floor and lead by example during service
Assist with staff training, development, briefings and performance management
Maintain consistently high standards of service, presentation and guest experience
Build genuine relationships with guests and proactively resolve concerns
Assist with rostering, labour management and daily operational planning
Support stock control, ordering and cost management
Ensure compliance with RSA, food safety, WHS and venue operating procedures
Work closely with the kitchen team to ensure smooth and efficient service delivery
Assist with functions, events, promotions and special activations
Support the Venue Manager with operational administration, reporting and other duties as required
About You:
Previous experience in an
Assistant Venue Manager, Restaurant Manager, Assistant Restaurant Manager or similar leadership role
Previous experience within a premium restaurant, or high‐end hospitality environment
Strong understanding of restaurant operations and service standards
Confident leading and developing front‐of‐house teams
Passionate about delivering exceptional guest experiences
Excellent communication,
interpersonal and problem‐solving skills
Strong organisational skills with the ability to manage multiple priorities
Professional presentation and a genuine passion for hospitality
Commercially minded with an understanding of labour, stock and operational costs
Calm, confident and solutions‐focused in a fast‐paced service environment
Flexible availability across a
5-day roster, including evenings, weekends and public holidays
Full Australian working rights (sponsorship not available for this role)
