complemented by a carefully curated sake selection.The RoleThis is a genuine ownership role with responsibility for:Driving premium and high-end wine salesDelivering polished and approachable wine serviceOrdering and managing wine stock across both restaurantsProviding significant input into wine-list developmentConducting supplier tastings and maintaining excellent supplier relationshipsAttending wine tastings, events and industry functionsProviding regular wine education for our service teamsMaintaining cellar organisation, stock rotation and inventory controlDriving the commercial performance and continued development of both programsAbout YouTo be considered, you will have:WSET Level 3 or an equivalent recognised wine qualificationSignificant sommelier experience within fine-dining environmentsDemonstrated experience working in Chef Hat or Michelin-starred restaurantsStrong to advanced knowledge of French and Italian winesStrong knowledge of Australian and New Zealand winesStrong selling techniques and a proven track record in premium and high-end wine salesExcellent food and wine pairing skillsStrong commercial awareness across purchasing, margins and stock managementExperience developing wine lists and maintaining supplier relationshipsThe confidence to educate and inspire front-of-house teamsExceptional guest engagement and presentation skillsSake knowledge will be highly regarded, although a willingness to develop this area is equally important.What We Offer$100,000–$110,000 per annum plus superannuationAdditional earnings through an established tipping structureFive-day working weekApproximately 42 hours per weekNo split shiftsGenuine influence over two substantial wine programsSupplier tastings, wine events and professional developmentFree staff meal allowanceDiscounted wine offering for Sommeliers50% off when dining across the groupCareer development within an established and growing hospitality groupWe are looking for a commercially minded wine professional who combines deep knowledge with genuine hospitality and the ability to make premium wine engaging and approachable.
