Help build one of Melbourne's most exciting new hospitality businesses from the ground up.
AGNII opens on Chapel Street, Windsor this spring.
Created by Gayan Pieris, Founder | Director | Executive Chef, AGNII is a contemporary expression of the Sri Lankan village life that shaped him.
Its beginnings are personal.
The hearth. Food prepared over fire. The rhythm of people gathering around a table. Ingredients grown, caught and cooked close to home. Generosity that needed no occasion.
AGNII carries those memories into Melbourne without trying to recreate them.
Gayan's cooking draws on Sri Lankan flavour, ritual and technique alongside exceptional Australian produce. Around it, a serious wine program, considered cocktails, music and a late-night bar create a restaurant that changes character as the evening unfolds.
And holding all of it together is hospitality.
Warm, generous and deeply considered.
We are now looking for the founding front of house team who will bring it to life.
The Opportunity
Great hospitality is remembering.
A name. A favourite wine before the list reaches the table. The anniversary someone mentioned the last time they were here.
It's knowing Gayan's food intimately and explaining every dish with the knowledge, detail and care it deserves.
It's creating the kind of place people return to again and again. Somewhere dinner becomes an entire evening because nobody is quite ready to leave.
Some nights will be full of friendship, laughter and celebration.
Others will hold intimate moments, quieter conversations and occasions that need a little more care.
Excellent hospitality knows the difference.
You'll join before opening, train together and learn AGNII from the inside out: the food and stories behind it, the wine and beverage program, the room and the rhythm of service.

Waiters
You'll own the experience at your tables.
You'll know every dish and speak about its ingredients, provenance, preparation and story with confidence. You'll develop serious wine knowledge, remember what people love and build relationships with returning guests.
You'll understand pace. When another bottle should arrive. When a table wants to linger. When dinner shouldn't be hurried towards its conclusion.
Our full-time waiters will form the spine of the dining room, carrying knowledge, consistency and culture through every service.
Host | Guest Experience
Before the food, before the wine, there is a welcome.
You'll own it.
You'll know who's arriving, recognise returning guests and notice the celebrations and details that matter.
Working closely with the Venue Manager, you'll manage arrivals, seating, walk-ins, waitlists, VIP recognition and the flow of the dining room through our busiest services.
The mechanics matter. But what matters most is making a full restaurant somehow feel as though there was always a place waiting for the person walking through the door.
Food Runners
Between Gayan's kitchen and the guest is a small but important distance.
You'll own it.
You'll learn every dish, understand what you're carrying and explain it clearly and confidently at the table while learning how the pass, kitchen and dining room work together through service.
For someone at the beginning of a hospitality career, this isn't a role at the edge of the restaurant.
It's a place to learn it from the centre.
About You
Experience matters for some of these positions.
Character matters for all of them.
We're looking for people who genuinely like looking after others. People who are curious, observant and generous by nature. Who take pride in knowing the details, stay composed when the room fills and care about the people they work alongside.
For experienced positions, a background in exceptional restaurants, wine bars, hotels or destination hospitality will be highly regarded.
Across the team, we're looking for:
• Natural warmth and confidence with guests.
• Genuine curiosity about food, wine and hospitality.
• Excellent presentation and attention to detail.
• Calmness, judgement and composure during service.
• Reliability and respect for your team.
• A current Victorian RSA where required.
• Full Australian working rights.
For emerging roles, potential matters.
If you're intelligent, curious, naturally good with people and serious about learning hospitality properly, we'd like to meet you.
