About the Role

As Sous Chef, you'll work closely with the Head Chef to lead daily kitchen operations, maintain consistency across all services, and help drive the continued growth of the Belair Hotel's food offering. This is a hands-on leadership role in a busy environment, catering to restaurant service, functions, events, and special occasions.

Key Responsibilities Include:

- Supporting the Head Chef in leading and developing a high-performing kitchen team

- Ensuring consistent delivery of high-quality food across all dining and function services

- Leading kitchen operations and service periods in the Head Chef's absence

- Assisting with stock control, ordering, rostering, and minimising wastage

- Training, mentoring, and developing junior chefs and kitchen team members

- Maintaining food safety, hygiene, and compliance standards at all times

- Contributing to menu development, seasonal specials, and continuous improvement initiatives

- Driving a positive, professional, and team-focused kitchen culture

About You

You're an experienced chef who enjoys leading from the front and setting high standards. You thrive in a fast-paced environment, have a genuine passion for food,



and take pride in creating exceptional dining experiences while supporting the growth of those around you.

We're Looking for Someone With:

- Proven experience as a Sous Chef or experienced Junior Sous Chef in a high-volume hospitality venue

- Strong leadership skills with the ability to motivate and develop a kitchen team

- Excellent technical cooking skills and attention to detail

- Experience delivering quality food across à la carte, functions, and events

- Strong understanding of food safety, kitchen operations, and service standards

- Ability to perform under pressure in a busy and demanding kitchen environment

- Excellent communication skills and a collaborative leadership style

- Flexibility to work across a 7-day roster, including nights, weekends, and public holidays
