We are searching for an exceptional Executive Pastry Chef to take the lead for our client - one of Australia’s most recognised and respected premium pastry and dessert businesses.

With a rich heritage, an unmistakable brand identity and a reputation built on exceptional craftsmanship, quality and innovation, this is an opportunity to take responsibility for a significant pastry operation at the highest level.

You will lead an operation comprising approximately 80 pastry chefs, bakers and production professionals - setting the standards, developing the people and driving the quality, innovation and commercial performance behind a major Australian premium food brand.

THE OPPORTUNITY

As Executive Pastry Chef, you will have overall leadership responsibility for a substantial, high-volume pastry operation.

You will be the driving force behind product quality, consistency, innovation and operational excellence, while building the leadership structure and culture required to successfully manage a team of this scale.

This is a genuine executive leadership position.

We are looking for someone who understands that exceptional pastry at this level is about more than technical ability.

It is about people, precision, creativity, consistency, systems, commercial performance and creating exceptional products at scale.

Your responsibilities will include:

- Lead, inspire and develop a team of approximately 80 pastry chefs, bakers and production professionals

- Lead and develop senior chefs, supervisors and team leaders, establishing clear accountability throughout the operation

- Build an effective leadership structure that allows a large pastry operation to perform consistently at the highest level

- Set and maintain exceptional standards across cakes, pastries, desserts and seasonal products

- Oversee high-volume production while protecting premium quality, presentation and consistency

- Lead product development, innovation and seasonal launches

- Introduce recent ideas, techniques and products that keep the business at the forefront of the market

- Build a culture of accountability, craftsmanship, teamwork and continuous improvement

- Oversee production planning, workflow, labour efficiency and resource allocation

- Monitor food cost, labour cost, production yields, waste and other key operational performance measures





- Identify opportunities to improve production systems, efficiency, quality and profitability

- Ensure the highest standards of food safety, hygiene, quality assurance and compliance

- Work closely with senior management on strategic, operational and commercial initiatives

- Develop future leaders within the pastry and production teams

- Ensure the pastry operation continues to deliver an exceptional customer experience at scale

We are looking for someone who can operate at the intersection of craft and commercial leadership .

You may currently be an:

Executive Pastry Chef | Head Pastry Chef | Pastry Director | Senior Pastry Manager

or hold a comparable senior leadership position within a major pastry, bakery, patisserie, hospitality or premium food production environment.

Technical excellence is essential - but this position requires considerably more.

You must have demonstrated the ability to lead large teams, develop managers, establish effective operational structures and take responsibility for large-scale production performance.

You will bring:

- Extensive senior-level pastry experience

- Exceptional technical knowledge across premium pastry and dessert production

- Proven experience leading large, multi-layered pastry or food production teams

- Experience managing and developing senior chefs, supervisors and team leaders

- Demonstrated ability to delegate effectively through senior team members and maintain accountability across a large workforce

- Strong product development and innovation capability

- Significant experience within a high-volume production environment

- Robust commercial and operational understanding

- Excellent labour planning and workforce management capability

- Strong understanding of food cost, labour cost, production yields, waste management, forecasting and operational KPIs

- A passion for quality, craftsmanship and innovation

- Outstanding communication and people leadership skills

- The ability to develop, mentor and inspire others

- A calm,

Our preference is for candidates who are currently based in Australia, particularly those with an established understanding of the Australian hospitality, food production and workplace environment.

However, exceptional international candidates with the required executive-level experience, technical capability and large-team leadership background will also be considered.
