The position is a specialised Cook role with particular responsibility for the preparation and cooking of tandoori dishes and other Indian cuisine using a commercial tandoor, while also undertaking the broader food preparation and cooking duties associated with the occupation of Cook. Working under the direction of the Head Chef, the successful applicant will prepare, season and cook food in accordance with established recipes, portion requirements, food-quality standards, presentation expectations and food-safety procedures. The role is hands-on and requires strong practical tandoor skills together with the ability to support general commercial kitchen service as required.

Task & responsibilities Key Responsibilities The main responsibilities will encompass, but are not limited to: Prepare, season and cook tandoori dishes using a commercial tandoor, including meat, poultry, seafood,
vegetables and other menu items.
Prepare marinades, spice blends and ingredients for tandoor cooking in accordance with approved recipes. Trim, cut, portion, marinate, skewer and prepare ingredients for tandoor service. Light, heat, operate and regulate the commercial tandoor safely and maintain appropriate cooking temperatures.
Monitor cooking times and heat levels and check the taste, texture, temperature and presentation of finished dishes. Cook naan and other tandoor-baked items where required by the restaurant menu. Prepare and cook other Indian dishes as required, including curries, biryanis, vegetarian dishes, sauces, appetisers and accompaniments.
Examine ingredients and food products to ensure freshness, quality and suitability for use. Operate ovens, grills, stovetops, fryers and other commercial cooking equipment safely and effectively. Follow approved recipes, preparation methods and portion-control requirements.
Portion, plate and garnish meals in accordance with restaurant presentation standards. Prepare or adapt food for reasonable dietary requirements, allergies and customer requests as directed by the Head Chef. Prepare the tandoor station and assigned work areas before service and maintain them in a clean and organised condition.
Monitor stock levels, rotate and label ingredients, store food correctly and assist with ordering where required. Follow food-safety, hygiene, temperature-control and allergen-management procedures. Coordinate with the Head Chef, other cooks, kitchenhands and front-of-house employees during service.
Provide guidance to junior kitchen employees regarding routine food-preparation tasks when directed by the Head Chef.
Essential Skills and Abilities Practical knowledge and demonstrated experience in commercial tandoor cooking. Knowledge of tandoor temperature control, marinades, spices, skewering and safe operation of tandoor equipment.
Experience preparing a range of Indian dishes, including tandoori items, curries, biryanis, vegetarian dishes, sauces and accompaniments. Strong commercial food-preparation and cooking skills. Ability to follow recipes and produce meals of consistent quality.
Sound knowledge of food safety, hygiene, allergen management and safe food storage. Good organisational and time-management skills and the ability to manage multiple orders during busy service periods. Attention to detail in relation to food quality, portioning and presentation.
Ability to work independently and collaboratively in a fast-paced commercial kitchen. Reliability, punctuality and effective communication skills. Qualifications and Experience AQF Certificate III or IV in Commercial Cookery (or equivalent relevant qualification).
Minimum of 1 year of relevant commercial cooking experience. Relevant experience preparing Indian cuisine in a full-service commercial restaurant. Demonstrated experience safely operating a commercial tandoor and preparing tandoori dishes.
Role Requirements Availability to work on a rotating restaurant roster, including evenings, weekends and public holidays as required. Ability to work effectively in a fast-paced commercial kitchen. Ability to perform the physical duties associated with commercial cooking and tandoor work.
Commitment to high standards of personal hygiene, food safety and workplace safety. Willingness to undertake relevant workplace training as required. Hold or be able to obtain appropriate Australian work rights for the position.
