Bau Bau - Mount Eliza is looking for an exceptional Sommelier who loves hospitality as much as they love wine.

We are building a reputation as one of Melbourne's most exciting dining destinations, an Italian restaurant where the menu is driven by the seasons, produce from our regenerative farm in Victoria's Central Highlands, and an ever-evolving wine programme celebrating growers, provenance and authenticity.

This role is about far more than pouring wine.

We're looking for someone who can lead the floor with confidence, create memorable guest experiences, mentor a front-of-house team and help continue developing the wine programme.

### About the role

As our Sommelier, you will be responsible for:

- Leading wine service throughout lunch and dinner

- Working closely with the directors to continually evolve wine list

- Sourcing exciting producers with a focus on Italy

- Building wine knowledge across the entire team

- Managing stock, ordering.

- Taking an active leadership role on the restaurant floor, ensuring service is polished, warm and consistent

- Supporting and mentoring supervisors and waitstaff during service

- Driving beverage sales while delivering genuine hospitality

- Working closely with the management team to maintain exceptional service standards every day

### About you

You'll ideally have:

- Previous experience as a Sommelier in a premium restaurant

- WSET, CMS or equivalent wine qualifications (preferred but not essential)





- Strong leadership skills and confidence running a busy dining room

- A genuine interest in European wine, particularly Italy.

- Excellent communication skills and natural warmth with guests

- High attention to detail and a calm presence under pressure

- A desire to continually learn and share your knowledge with others
