Placed.au is looking for a full time Group Hospitality Manager for our client in Ballarat Central, Victoria. This role entails the overall strategic and operational management of multiple Thai dining venues across Ballarat. This leadership role ensures consistent delivery of high-quality service, brand alignment, and efficient coordination of staff, finance, marketing, and compliance activities. It combines hands‑on hospitality leadership with group‑level operational oversight and expansion planning.
Key Responsibilities
Multi‑Venue Operations Leadership
- Supervise day‑to‑day operations and customer experience across all current and upcoming venues.
- Support restaurant managers in staffing, service delivery, and compliance.
- Lead the opening of two new venues – from recruitment and training through to supplier coordination and launch execution.
- Standardise operating procedures and quality benchmarks across all restaurants.
People Management and Training
- Lead, train, and mentor venue managers, chefs, and front‑of‑house teams.
- Develop training modules on Thai‑style hospitality, customer engagement, and food safety.
- Conduct site audits and feedback sessions to improve service flow and morale.
- Build a team culture that reflects Thai values of courtesy, warmth, and teamwork.
Financial and Operational Control
- Prepare and monitor venue budgets, P&L; statements, and group performance reports.
- Oversee cost control, purchasing, inventory, and waste‑management programs.
- Identify underperforming venues and implement corrective strategies.
- Coordinate group‑level procurement to achieve economies of scale.
Marketing and Brand Management
- Maintain a cohesive group identity while promoting the unique character of each venue.
- Plan local marketing campaigns, loyalty programs, and promotional events.
- Oversee social media and digital presence across venues.
- Foster relationships with regional tourism and community bodies.
Compliance and Risk Management
- Ensure compliance with Victorian food safety, liquor licensing, and OHS requirements.
- Conduct regular audits of hygiene, safety, and regulatory documentation.Coordinate staff certification renewals and ensure all sites pass required inspections.
Procurement and Supplier Relations
- Manage contracts with key suppliers—both local and Thai—to maintain authenticity and reliability.
- Implement group purchasing systems for ingredients, uniforms, and equipment.
- Monitor delivery performance and negotiate cost savings without compromising quality.
Skill & Experience
Qualifications / Attributes
- Must hold a minimum Diploma or higher in Hospitality Management, Business Administration, or a related discipline, or at least three (3) years of relevant work experience may substitute for the formal qualification.
- Must possess at least one (1) year of relevant work experience in a hospitality management or similar leadership role.
- Proven ability to lead large, diverse teams and coordinate multiple hospitality venues.
- Solid financial literacy, including budgeting, reporting, and cost control.
- Sound knowledge of hospitality regulations, food safety, liquor licensing, and workplace health and safety requirements in Victoria.
- Understanding of Thai cuisine and service culture is highly advantageous.
- Excellent communication, leadership, organisational, and strategic planning skills.
Salary Range
$80,000 – $100,000 per annum excluding superannuation.
