Smallgoods & Sausage Maker or Apprentice

Country Cooked is an Australian owned and operated manufacturer of premium quality cooked protein. We are looking for a fulltime Smallgoods Maker - Butcher or potentially apprenticeship. The successful candidate will be trained in sausage making, mixing & filling smallgoods, record keeping & knife skills for immediate start to join our team.

Duties and responsibility Trained includes:

n

n
- Operating mixers and mincers with bin lift
n
- Operating bowl cutter with bin lift
n
- Operating the latest state of the art Handtmann automatic linking sausage filler with bin lift
n
- Maintaining full HACCP records, and be compliant with food safety standards
n
- Crumbing schnitzels, hamburgers, skewers and other products
n
- Operating packaging machinery, labelling and boxing
n
- Continue to improve quality and consistency as well as working within target price ranges.
n

Successful candidates will have the following skills:

n

n
- Knowledge on using natural and collagen casing
n
- General smallgoods knowledge to trial and develop a range of smallgoods
n
- Positive knife skills for trimming and preparing meat products for manufacturing
n
- Able to train others
n
- Team player
n

n
