Key Responsibilities
As Chef de Partie at Rydges Melbourne, you'll take ownership of your section in a fast-paced, high-volume kitchen, delivering consistently high-quality dishes across our restaurant, bar, and events offering.
We have casual and full-time CDP positions available.
- Ensuring consistently high-quality food production across all hotel kitchens, following standard recipes and portion control
- Preparing and presenting all food items (hot dishes, sauces, pantry items, and special functions) to hotel standards, with strong product knowledge
- Maintaining excellent food safety, hygiene, cleanliness,
and WH&S; compliance across all work areas and storage facilities
- Monitoring, requisitioning, and protecting food products and kitchen equipment in line with hotel policies and procedures
- Completing duties in a timely manner while maintaining professional grooming and a positive, team‑oriented attitude
- Attending scheduled meetings and performing additional duties as directed by the Executive Chef or Sous Chef
What You’ll Bring
- 1-2 years’ worth of experience as a CDP in hotels, restaurants, or bistros.
- Experience across different sections including pans, grill and larder.
- Ability to train, guide and mentor junior staff.
- An eye for detail and maintaining product consistency and quality.
- Strong communication skills and a positive, can‑do attitude.
- Attention to detail, well‑presented and high standards of cleanliness.
- Ability to multitask and perform under pressure, while still delivering a high standard.
