Position Overview

n

The Retail Butcher position is a full-time skilled role responsible for the preparation, processing, and retail sale of meatproducts. The role requires a high level of trade skill, product knowledge, and compliance with Australian food safety andworkplace standards. The position is essential to the ongoing operations and growth of the business.

Duties and Responsibilities

n

n
- Preparing, cutting, trimming, boning, rolling and slicing beef, lamb, poultry and other meats for retail sale
n
- Operating and maintaining butchery equipment including bandsaws, slicers, mincers, and knives
n
- Producing value-added products such as sausages, marinated meats, and specialty cuts
n
- Preparing meat products to customer specifications and providing expert advice on cooking methods
n
- Weighing, pricing, labelling, and displaying meat products for retail sale
n
- Ensuring strict compliance with food safety, hygiene, and temperature control requirements
n
- Maintaining clean and safe work areas in line with WHS and food safety legislation

- Monitoring stock levels, rotating stock, minimising waste, and assisting with ordering
n
- Supporting daily retail operations including opening and closing procedures
n
- Contributing to staff guidance and on-the-job training where required
n

Skills, Qualifications and Experience

n

n
- Relevant trade qualification as a Butcher or equivalent demonstrated experience
n
- Minimum of 3 years' post-qualification or equivalent experience in a retail butchery setting
n
- Proven ability to perform skilled meat preparation techniques independently
n
- Strong knowledge of Australian food safety standards
n
- Excellent customer service and communication skills
n
- Ability to work full-time in a physically demanding role
n
