Redcape Hospitality is looking for an experienced Head Chef to lead the kitchen at Shamrock Hotel Motel. You'll bring the team together, strengthen performance and help elevate a food operation the venue can be proud of.

About the Role

n

You'll oversee Shamrock's food operation across everyday dining, functions and conferences, leading a hands‐on kitchen team through busy service and everything that happens behind it.

n

You'll help bring new menus to life, strengthen kitchen performance and build a team that takes pride in the food it serves. You'll have the autonomy to lead, backed by experienced food and operational leaders when you need support.

What You'll Do

n

n
- Work with Redcape's Executive Chefs to develop and launch new venue and function menus
n
- Lead and develop the kitchen team through transparent direction, coaching and support
n
- Build strong working relationships across kitchen,



front‐of‐house and venue management
n
- Drive consistent food quality, presentation and service delivery
n
- Manage COGS, labour, stock and kitchen performance against budget
n
- Maintain high food safety, compliance and WHS standards
n

What We're Looking For

n

n
- At least 3–5 years' experience as a Head Chef in a high-volume venue
n
- Strong people leadership that builds trust, strengthens culture and unites teams
n
- Excellent organisation and time management skills
n
- Flexibility to work a rotating roster, including weekends
n
- Strong commercial capability across COGS, labour, compliance and P&L; performance
n
- Confidence using rostering, reporting and kitchen management systems, including Cooking the Books
n
