Toto Fish Bar is a Japanese fish bar coming to Glen Waverley -- fresh seafood, a fun team, and a concept that Glen Waverley has never seen before. No egos, staff meals on us, and a real chance to shape something new from day one.

What you'll be doing

n

Prepare fish, seafood, rice, sauces and garnishes to spec

n

Nigiri, maki, sashimi -- knife work and plating on point, every order

n

Keep the station tight -- clean, labelled, organised

n

Food safety and hygiene done properly, every shift (raw fish handling, temp control)

n

Communicate clearly with FOH and the rest of the kitchen during service

n

Follow prep lists, flag low stock, minimise waste

n

Work quick under pressure without dropping quality

n

(Sous Chef level)

n

Right hand to the Head Chef -- prep, service, organisation, the works

n

Hold the standard: quality, plating, portions, consistency

n

Own the prep lists, stock, ordering and waste

n

Develop the junior team and step up when needed

n





Help build the systems that make this kitchen run

Food Safety Supervisor cert, or willingness to complete one
