Byron Bay Hot Bread Kitchen is seeking a passionate, reliable Baker to join our busy family-owned team. We have been a local staple in the heart of Byron Bay since 1982, serving up fresh breads, legendary pies, pastries, and sweet treats across our 24/7 day-and-night operations.

About the Role

n

We are looking for a reliable, early-rising Baker to manage daily high-volume production to be part of a busy coastal bakery delivering fresh, high-quality products daily. You will work closely with our production crew to ensure our shelves are always stocked with premium products. This role focuses purely on high-volume, premium bread production. You will manage the entire dough lifecycle from raw ingredients to the final bake.

Your daily tasks will include:

- Scaling, mixing, and monitoring commercial-sized dough batches.
n
- Hand-moulding, shaping, and cutting traditional breads, sandwich loaves, baguettes, and specialty rolls.
n
- Managing proofing times and adjusting schedules based on temperature and kitchen variables.
n
- Operating commercial deck ovens and rotary rack ovens with precise temperature control.
n




- Ensuring absolute consistency in crust, crumb, and bake across all product lines.
n
- Maintaining strict food hygiene, safety standards, and deep cleaning of mixing and baking zones.
n

Requirements

n

n
- Relevant qualification in baking or at least 2–3 years of hands-on experience in a commercial bakery environment.
n
- Solid knowledge of dough preparation, fermentation, proofing, and baking techniques.
n
- Ability to follow recipes accurately and maintain consistency in high-volume production.
n
- Excellent time management skills with the ability to work early morning shifts, weekends, and in fast-paced environment.
n
- Strong attention to detail, hygiene standards, and ability to work effectively within a team.
n
