A&K; Aus Pty Ltd trading as Canteena is seeking an experienced and motivated Chef to join our professional kitchen team on a full-time basis.
The successful candidate will be responsible for planning and organising the preparation and cooking of food, coordinating daily kitchen activities, maintaining food quality and presentation standards, and ensuring that food preparation and service are carried out efficiently.
The role requires a Chef who can take responsibility for food preparation and cooking, contribute to menu planning, monitor food and ingredient requirements, coordinate with management and other kitchen staff, and ensure compliance with food safety and hygiene requirements.
The successful candidate will play an important role in maintaining the quality and consistency of Canteena's food offering and supporting the efficient operation of the kitchen.

Task &
responsibilities
- Plan and organise the preparation and cooking of food for daily restaurant operations and service periods.
- Assist with planning and reviewing menus in consultation with management, taking into consideration customer preferences, seasonal availability, food costs and operational requirements.
- Estimate food quantities and ingredient requirements based on anticipated customer demand and menu requirements.
- Assist with estimating food and labour costs associated with menu items and kitchen operations.
- Order and coordinate food, ingredients and kitchen supplies to ensure adequate stock is available for daily operations.
- Inspect and assess the quality and freshness of food ingredients and other supplies before use.
- Prepare, cook and finish a wide range of dishes in accordance with established recipes, preparation methods and quality standards.
- Monitor the quality of dishes throughout preparation,
cooking and presentation.
- Ensure consistency in taste, portioning, texture, temperature and presentation of dishes.
- Develop and maintain appropriate preparation procedures to ensure efficient kitchen operations.
- Discuss food preparation and kitchen operational issues with management and other kitchen and service staff.
- Demonstrate appropriate cooking techniques and provide guidance to other kitchen staff regarding food preparation and cooking procedures.
- Coordinate food preparation activities to ensure dishes are completed and served within required service times.
- Monitor the progress of food preparation and ensure appropriate sequencing of kitchen tasks during busy service periods.
- Ensure food is prepared and stored in accordance with applicable food safety and hygiene requirements.
- Explain and enforce food safety, hygiene and safe food-handling procedures within the kitchen.
- Monitor temperatures and storage conditions of food and ensure appropriate stock rotation procedures are followed.
- Assist in maintaining appropriate kitchen systems for preparation, storage and handling of food.
- Monitor food usage and minimise wastage through effective preparation, portion control and stock management.
- Liaise with management regarding ingredient availability, menu requirements, food costs and kitchen operational requirements.
- Assist with the development and preparation of daily specials and new menu items.
- Maintain high standards of cleanliness and ensure kitchen equipment, preparation areas and workstations are maintained appropriately.
- Safely operate and monitor the use of commercial kitchen equipment, including ovens, grills, cooktops and other cooking equipment.
- Coordinate with front-of-house staff to ensure efficient and timely food service.
- Assist with food preparation and service for private functions, special events and other catering requirements.
- Provide guidance and demonstrate appropriate cooking and food preparation techniques to junior kitchen staff where required.
- May assist with selecting, inducting and training kitchen staff in food preparation, cooking procedures and hygiene practices.
- May assist with freezing, preserving and other appropriate food preparation and storage processes where required.
Qualification &
experience
- Minimum 2-3 years of relevant commercial kitchen experience, or a relevant qualification combined with appropriate industry experience.
- A minimum of Certificate IV in Commercial Cookery or an equivalent relevant qualification.
- Strong knowledge of commercial cooking techniques and food preparation methods.
- Demonstrated ability to plan and organise food preparation and cooking activities.
- Experience with menu planning and preparation of food in a commercial dining environment.
- Understanding of food, ingredient and kitchen supply requirements.
- Ability to monitor food quality throughout preparation and presentation.
- Knowledge of food costing, portion control and minimising food wastage.
- Strong understanding of food safety, hygiene and safe food-handling practices.
- Ability to work efficiently and maintain food quality during busy service periods.
- Ability to communicate effectively with management, kitchen staff and front-of-house staff.
- Ability to demonstrate and communicate appropriate cooking techniques and procedures to other kitchen staff.
- Strong organisational skills and attention to detail.
- Ability to work independently as well as collaboratively within a professional kitchen team.
