We are seeking an experienced Chef de Cuisine to lead the day-to-day culinary operations of our Matilda Bay Restaurant and Function Centre, working closely with our Executive Chef to deliver exceptional food, service and kitchen performance. About the Role
You will be responsible for managing the day-to-day operations of the Matilda Bay Restaurant and Function Centre kitchen, ensuring high standards of food quality, efficient kitchen operations and strong team performance. Working closely with the Executive Chef, you will take ownership of the daily execution of the kitchen while supporting the overall culinary direction and business objectives.
Key Responsibilities
- Lead from the front during service, creating a positive, professional and high-performing kitchen culture
- Manage the day-to-day operations of the Matilda Bay Restaurant and Function Centre kitchen to ensure smooth and efficient service
- Execute menus and culinary standards established in collaboration with the Executive Chef
- Deliver consistently high-quality food, ensuring excellent standards of quality, consistency, presentation and portion control
- Contribute to menu development, seasonal menus, special events and function planning alongside the Executive Chef
- Assist with kitchen rostering to ensure appropriate staffing levels and operational requirements are met across restaurant and function services.
- Lead, mentor,
coach and develop chefs at all levels, supporting growth opportunities and building a strong kitchen team
- Supervise kitchen sections and coordinate preparation and service during busy restaurant and function periods
- Work closely with the Executive Chef to achieve agreed food cost, labour and operational target
- Assist with stock ordering, inventory management, portion control and minimising food wastage
- Support the Executive Chef in implementing kitchen systems, processes and continuous improvement initiatives
- Handle operational issues and problem-solve in real time during service
- Maintain compliance with WHS, food safety, hygiene and company policies
- Ensure cleaning schedules and kitchen safety procedures are consistently followed
- Support the successful delivery of functions, events and high-volume service periods
About You
- Minimum 2 years of experience in a senior chef or kitchen leadership role within a premium restaurant, hotel or function environment
- Trade qualified chef with proven experience leading a kitchen team
- A hands-on leader who enjoys working alongside their team during service
- Strong leadership, teamwork and coaching abilities within a kitchen setting
- Calm and decisive under pressure, with the ability to lead a team through busy service periods
- Excellent organisational, communication and problem-solving abilities
- Strong understanding of kitchen operations, food quality and service standards
- Valuable commercial awareness, including food costs, labour, stock control and wastage
- High attention to detail and a passion for delivering exceptional food and guest experiences
- Positive, approachable and professional leadership style
