400 Gradi Mornington is looking for an experienced Restaurant Manager to lead the day-to-day operations of our Mornington venue.

400 Gradi is an internationally recognised Italian restaurant brand known for authentic Italian hospitality, quality produce and exceptional guest experiences.

We are seeking an experienced, hands-on Restaurant Manager who can lead our front-of-house team while maintaining strong operational, financial and service standards.

Position: Restaurant Manager – Full-Time

Salary: $85,000 per annum + superannuation

Hours: Full-time – approximately 38 hours per week

What you'll do

As Restaurant Manager, you will be responsible for the overall operation and management of the venue, including:

- Leading and supervising front-of-house employees and maintaining high standards of service
- Managing daily restaurant operations and ensuring a consistent guest experience
- Preparing and managing staff rosters in line with operational requirements and labour budgets
- Monitoring labour costs, COGS, stock control and other venue expenses
- Managing POS, cash handling, reconciliation and daily operational reporting
- Recruiting, onboarding, training, coaching and developing team members
- Managing employee performance in consultation with senior management and HR
- Responding to customer feedback and resolving complaints professionally
- Managing beverage stock levels, ordering and cost-control procedures
- Ensuring the venue is maintained to appropriate presentation, cleanliness and food safety standards
- Ensuring compliance with workplace health and safety, responsible service and other applicable requirements




- Working closely with kitchen management and the broader Gradi Group management team

What you'll bring To be successful in this position, you will have:

- Previous experience as a Restaurant Manager, Venue Manager or comparable senior hospitality manager
- Demonstrated experience managing a full-service restaurant operation
- Strong people leadership and team management skills
- Experience with rostering, labour management and operational cost control
- Understanding of restaurant financial performance, including labour costs and COGS
- Experience with stock control, POS systems, cash reconciliation and operational reporting
- Strong customer service and complaint-resolution skills
- Excellent communication, organisation and problem-solving abilities
- Ability to lead from the floor and remain hands-on during busy restaurant services
- Knowledge of food safety, RSA and workplace health and safety requirements
- Availability to work across a restaurant roster, including evenings and weekends as required

Experience within a premium, high-volume or Italian restaurant setting will be highly regarded but is not essential. Applicants must be legally entitled to work in Australia.
