About the role

This is a unique opportunity to join an innovative operation developing Australia's first mobile game meat processing model. You will be part of a growing operation connecting responsible invasive animal management with the production of fully traceable, regulated game meat for human consumption and premium pet food markets. As a Butcher or Skinner, you will play an important hands-on role in processing carcasses to a high standard while maintaining strict food safety, hygiene, quality and traceability requirements.

Key responsibilities
Skinning wild game carcasses efficiently and safely
Butchering, boning, trimming and cutting carcasses to required specifications
Working with species including deer, goats, wild boar and rabbits
Using knives and meat processing equipment safely and efficiently
Maintaining high standards of product quality and presentation
Following food safety, HACCP and hygiene procedures
Maintaining strict sanitation and cold-chain requirements




Ensuring product identification and traceability requirements are followed
Maintaining a clean, organised and safe processing environment
Working collaboratively with the wider production team

About you
Previous commercial experience as a Butcher, Skinner or Boner
At least 1 year of practical meat-processing experience
Strong knife-handling and carcass-processing skills
Experience working in a commercial meat-processing workplace
Positive understanding of food safety and hygiene requirements
The ability to work efficiently in a cold production workplace
Strong attention to detail
Valuable physical fitness
A strong work ethic and reliable attendance
