About the rolePrinci Butchers Pty Ltd is seeking a skilled Smallgoods Maker to join our team in Fremantle, Western Australia.
This is a part-time position that offers the opportunity to work with traditional smallgoods production methods whilst being part of a respected local butchery.
As a Smallgoods Maker, you will play a vital role in crafting quality smallgoods products that form an essential part of our offering to our valued customers.
Your expertise and attention to detail will directly contribute to maintaining the high standards and reputation Princi Butchers is known for within the community.
Key responsibilities
Prepare and process meat for smallgoods production, including trimming, portioning and mixing ingredients according to established recipes and food safety standards
Operate and maintain smallgoods production equipment, including grinders, mixers, ensuring all machinery is kept clean and in working order
Create a variety of smallgoods and other cured and processed meat products
Monitor fermentation and curing processes for products requiring aging or special treatment, maintaining appropriate temperature and humidity conditions
Ensure all products meet our quality standards and comply with food safety regulations and labelling requirements
Maintain cleanliness and hygiene of work areas, equipment and tools in accordance with health and safety guidelines
Assist with packaging, labelling and stock rotation of finished smallgoods products
Support the wider butchery team as needed to meet production demands and customer requirements
What we're looking for
Proven experience as a Smallgoods Maker or in a similar meat processing or butchery role
Strong knowledge of smallgoods production techniques, including sausage making, curing, smoking and fermenting processes
Understanding of food safety standards, hygiene regulations and compliance requirements relevant to meat processing




Ability to operate and maintain smallgoods production equipment safely and effectively
Excellent attention to detail with a commitment to producing consistent, high-quality products
Physical fitness and ability to perform repetitive tasks and handle heavy items safely
A reliable and flexible attitude, with willingness to work part-time hours as scheduled
Strong communication skills and the ability to work collaboratively within a team environment
Current or willingness to obtain relevant food handling and safety certifications
Experience with traditional smallgoods production methods is highly valued
