The Apollo Restaurant Group is expanding its wine program across Sydney, Brisbane and Tokyo. We are seeking a Group Sommelier to lead our wine strategy and work closely with venue sommeliers to develop wine lists suitable for each restaurant.
You will manage ranging, pricing, and supplier relations while driving sales and margins. You’ll also train and mentor sommeliers, and contribute to upcoming openings at Wunderlich Lane, shaping wine direction across the group.
