Our client, Mad Mexicana, located in Kennington, Victoria 3550, is seeking an experienced full time Chef to support its kitchen operations. The restaurant offers authentic Mexican cuisine in a warm and vibrant atmosphere, with freshly prepared dishes complemented by a selection of cocktails, margaritas, wine, and beers. The successful candidate will contribute to delivering high-quality Mexican dishes and maintaining the venue’s food standards. The position offers a salary of $80,000 to $85,000 per annum plus superannuation, commensurate with experience.

Key Responsibilities:

· Develop menus, calculate food and labour costs, and arrange the purchase of food supplies.

· Inspect the quality and presentation of dishes during preparation, cooking, and service.

· Liaise with Managers, Dietitians, kitchen staff, and waiting staff regarding food preparation requirements and related matters.

· Demonstrate suitable cooking methods and provide guidance on kitchen techniques and procedures.

· Prepare and cook authentic Mexican dishes in line with recipes, menu specifications, and quality standards.





· Communicate and uphold food safety, hygiene, and sanitation requirements throughout kitchen operations.

· Assist with the recruitment, selection, and training of kitchen staff as required.

· Apply appropriate freezing and food preservation methods to maintain product quality and freshness.

· Prepare fresh-to-order Mexican dishes in accordance with menu requirements and established recipes.

· Maintain the consistency of traditional Mexican flavours across food preparation and presentation.

· Contribute to the preparation and presentation of vibrant Mexican cuisine that meets customer expectations.

Qualifications:

· Certificate III and Certificate IV in Commercial Cookery.

· Diploma of Hospitality Management.

· Minimum 1 year of experience working in Australia as a skilled Chef.

Note: Australian Citizens and Permanent Residents are preferred.

Pay: $80,000.00 – $85,000.00 per year
