Bells at Killcare is a 25 -room luxury property located in a stunning coastal setting surrounded, by sun-drenched beaches and the Bouddi National Park. The property is one and a half hours north of Sydney and boasts the Wildflower Bar & Dining, Bells Bakery, Day Spa, Resort Facilities and a Wedding & Conference Centre. In 2024, the property also added four luxury 2-bedroom lodges, each with their own private pool, fully equipped contemporary kitchen, a lavishly stocked bar & larder, and sunset viewing deck.
Under the leadership of Culinary Director Cameron Candsell, we are looking for a talented and passionate Head Chef, to lead our extensive kitchen brigade.
At Bells at Killcare, our food style marries traditional Mediterranean flavours with stunning local produce. Our huge, organically grown garden is more than a source of fresh produce; it’s the cornerstone of our culinary philosophy. From vibrant vegetables and fragrant herbs to unique heirloom varieties, our garden provides a rich palette of ingredients that inspire our seasonal menu. We also harvest eggs from our own Bells at Killcare Farm, adding a distinctive touch to our house-made pasta doughs, desserts, and sauces.
Sustainability
Our garden’s organic practices are central to reducing our carbon footprint and fostering environmental responsibility. By growing our own produce,
we lessen our reliance on external sources and minimise transportation emissions.
Local Sourcing
Directly sourcing ingredients from our garden not only ensures peak freshness but also significantly cuts down on greenhouse gas emissions related to food transportation. This local approach advantages both our community and the environment.
To thrive in the role the successful candidate must possess.
- Extensive experience as a Head Chef in a multi outlet operation of a similar standard
- A passion and flair for Mediterranean/European Cuisine
- A flair for menu design and an ability to collaborate with the Culinary Director
- A high level of commercial acumen including a heightened ability to control payroll costs, food goods and other overheads
- Ability to contribute positively to the company management team
- Proven leadership capabilities and people management skills
- A strong work ethic, high level of self-motivation and attention to detail
- Proficient in MS Office and other applications
- A commitment to sustainability practices
- Experience with Cooking the Books or other kitchen management software an advantage
