The Apollo Restaurant Group is the team behind The Apollo and Cho Cho San in Potts Point, Olympus Dining at Wunderlich Lane in Surry Hills, Greca and Yoko in Brisbane, and The Apollo in Tokyo.
Greek fire cooking in one room, Japanese charcoal and sashimi in the next. Each restaurant has its own identity, its own menu and its own approach to wine. And we're growing. Two new restaurants will join the group as part of the Wunderlich Precinct at Wunderlich Lane later this year, creating an opportunity for someone to help shape their wine programs from the beginning.
The role
We're looking for a Group Sommelier to lead our broader wine strategy and work closely with our venue sommeliers to develop wine programs that make sense for each restaurant. You'll be responsible for:
Group wine strategy, working alongside our Director and venue sommeliers on list development and evolution
Ranging, pricing, allocations and building strong relationships with wineries, distributors and suppliers
Driving wine sales and keeping a close eye on margins, cost of goods and stockholding
Leading wine education and training across the group and supporting the development of our sommeliers and emerging wine talent
Helping shape the beverage programs for our two new venues at Wunderlich Lane
Identifying opportunities across the group while protecting what makes each restaurant and its wine program different
You'll also spend time on the floor. We want our sommeliers and restaurant teams to see you in service, working alongside them and understanding what's happening in our restaurants.
About you
You've led wine in a respected restaurant or hospitality group as a Group Sommelier or Wine Director
You have robust wine knowledge and established relationships across the industry and understand the commercial side of a wine program. A great list needs to work
