At Big Loaf, bread is made the slow way. Long ferments. Hand shaping. Real sourdough. We run a serious production kitchen in Perth's artisan scene and we're growing — which means we need bakers who can hold their own and take pride in doing things properly.

We're hiring across two shifts — 2am start and 10am start — and we're open to both experienced senior bakers and solid mid-level bakers who are ready to step up.
What the work looks like
Our workflow runs on cold retard — afternoon shapes, morning bakes. You need to understand fermentation, respect timing, and know what it means when a dough isn't right.
- Mix and bake artisan and specialty breads — sourdough is our foundation
- Follow recipes and production procedures with precision and consistency
- Maintain a clean,
organised kitchen with real food safety discipline
- Work as a reliable part of a shift team — communication matters as much as craft
- Senior bakers: mentor junior team members and contribute to recipe development
What we're looking for
Mid-level baker:
- Solid hands-on experience with artisan bread
- Comfortable with sourdough production
- Reliable, fast-paced, team-first mindset
- Baker qualification or equivalent experience
Senior baker:
- 5+ years in an artisan production environment
- Deep sourdough knowledge — fermentation, shaping, troubleshooting
- Experience leading or mentoring a small team
- Can own a shift independently
