Executive Pastry Chef – Exciting New Store Opening

We are seeking an exceptional, creative and highly experienced Executive Pastry Chef to lead the pastry and bakery offering for an exciting new store opening.

This is a unique opportunity to join us from the beginning and play a key role in developing the pastry direction, building the team and creating a premium product range for our newest location.

About the Role

Reporting directly to senior management, the Executive Pastry Chef will oversee all aspects of pastry and bakery production, from product development and menu creation through to daily production, quality control and team leadership.

We are looking for someone who combines outstanding technical ability with creativity, strong leadership skills and a genuine passion for producing exceptional pastries and baked goods.

Key Responsibilities

- Lead and oversee all pastry and bakery operations for our exciting new store.
- Produce and oversee premium pastries, cakes, desserts and baked goods to the highest standards.
- Develop a distinctive pastry range in collaboration with management, including signature products, seasonal collections and new menu concepts.
- Bring creativity and innovation to the business while maintaining consistency and commercial viability.
- Stay ahead of emerging pastry trends, techniques and customer preferences.
- Establish production systems, recipes, procedures and quality standards for the new store.
- Recruit, train, mentor and lead a high-performing pastry team.
- Manage daily and weekly production planning to ensure quality, consistency and efficiency.
- Manage stock ordering, inventory control, wastage and supplier relationships.
- Monitor food costs, labour costs and overall production efficiency.
- Taste,



inspect and monitor products throughout production to maintain exceptional quality and presentation.
- Ensure the highest standards of food safety, hygiene and WHS are maintained at all times.
- Work closely with senior management on menu development, seasonal launches and future business growth.
- Confidently contribute current ideas while remaining collaborative and open to feedback.

About You

The successful candidate will have:

- A relevant qualification in Patisserie, Commercial Cookery or an equivalent discipline.
- Significant experience in a Senior, Head or Executive Pastry Chef position.
- Exceptional pastry, baking, finishing and presentation skills.
- A solid creative eye and passion for developing premium, contemporary products.
- Experience developing menus and taking new products from concept through to production.
- Strong leadership skills with experience recruiting, training and developing pastry teams.
- Excellent organisational, production planning and time-management skills.
- Experience managing inventory, suppliers, food costs, labour and wastage.
- Exceptional knowledge of food safety, hygiene and WHS requirements.
- A positive, professional attitude with the ability to lead by example.
- A genuine passion for quality, consistency, creativity and innovation.
