Placed on Chapel Street, Windsor, from the team behind Gilson, The Frog Club channels the energy of classic New York supper clubs and iconic Hollywood dining rooms. Think dry-aged steaks, fresh seafood, brasserie classics executed properly, cold martinis, and high-energy service seven nights a week. The Role You’ll take total accountability for your section—preparation, execution, and closing standards. Working alongside the Head Chef and Sous Chef, you will drive menu consistency while mentoring the junior line.
- Execution: Run your section with precision and pace across full, high-volume services.
- Standards:
Maintain exact quality and presentation on every single plate, every single night.
- Preparation: Complete mise en place to the Head Chef’s exact standard, fully set before the first order drops.
- Leadership: Support the on-the-job development of Commis Chefs and Kitchen Hands.
- Operations: Oversee section cleanliness, HACCP compliance, stock rotation, yield management, and waste reduction.
What We’re Looking For
- Proven Experience: Demonstrated background as a CDP in a high-volume, quality-driven restaurant (grill, fish, or larder experience strongly preferred).
- Autonomy: Able to step in and run a section independently from week one.
- Consistency: The standard on a quiet Tuesday matches the standard on a peak Saturday.
- Composure: Works cleanly under pressure and maintains sharp, clear communication on the line.
- Attitude: Brings quiet confidence, high energy, and genuine respect for the craft.
